CEGS LEMON-LIME MOUSSE PIE
Secretly missing summer? Well, I can’t relate… but this pie totally can! When I hear “pie”, I think ALL things autumn. I couldn’t think of anything better than a warm apple pie (and a touch of vanilla ice cream) on a Sunday afternoon… BLISS! But… who wants to wait half a year for pie?! Pies don’t have to be saved for the cold seasons! I hear you all chanting “hoorah” overseas! I conjured up this recipe on a warm September evening when I was totally ready to get my autumn soups going and my winter PJs on but the weather just wasn’t having any of it; the sun continued to blaze. I needed pie but I needed cool, refreshing flavours! So here’s my crazy mousse-pie (call it what you like, it’s guilt-free deliciousness!)
Serves 8
Ingredients – base
- 45g hazelnuts
- 25g walnuts
- 30g chia seeds
- 90g oats (if you use gluten-free oats, this recipe is 100% gluten free!)
- 2 medjool dates (pitted)
- 3 regular dates (pitted)
- 4 tbsp coconut oil
Ingredients – filling
- 1 400ml coconut milk (tinned)
- 2 large ripe avocados (peeled, stone removed and cut into chunks)
- 2 limes
- 1 lemon
- 3 tbsp honey
- 30g desiccated coconut
- Less than half a tsp of spirulina powder
Method
- Add all the ingredients for the base into a food processor and blend
- Empty the mixture into a pie dish (it doesn’t have to be oven proof… it’s a no-bake pie!)
- Firmly squash the base into the pie dish with your hands and place in fridge
- If your food processor is large, rinse and re-use for the next steps. If it is too small, get a large mixing bowl and a handheld blender, or even a smoothie maker!
- Add the coconut milk and avocados to the blender
- Zest and juice the lemon and add to the mixture
- Zest the two limes and add to the mixture
- Cut the limes in half and slice a few slices for decoration later
- Juice the limes into the mixture and whiz until smooth
- Add the honey, coconut and spirulina powder and whiz again
- Grab the base from the fridge, pour the filling on top and smooth with the back of a spoon
- Decorate with the lime slices
- Pop it in the freezer for 1 hour
This pie will keep in the freezer or the fridge, depending on how you prefer it, for about 2 weeks (but I doubt it will go untouched for that long!)
I’m currently eating a slice with coffee and I had the urge to drizzle a little bit of extra honey on it… AMAZING.
N.B. this is a PERFECT Halloween treat for everyone to enjoy; it’s green!
