CEGS FIG AND CHEESE CROISSANTS
FLEXIBLE. That’s what CEGS is about, because we know that it’s not easy to give up your favourites. Comfort food is something that’s actually vital to our mental state, especially during tough times (did someone say ‘self-isolation’? ..) so INDULGE once in a while, it’s actually good for you! Anyway, if you were still feeling a little sceptical (on the search for another superfood recipe, were you?) then let me stop you; there’s fruit in this delicious little bite! A-ha! I’ve got you hooked, haven’t I? Well, this is how it’s done:

Ingredients
- 1 pre-made pastry: either 1x pizza base or 1x puff pastry (keep in fridge until you need it)
- 20g flour (approximately, as it’s only to flour the surfaces)
- approx 6 tbsp of Andros Chef Purple Fig High Fruit Compote
- 6 small handfuls of mixed, grated cheese (Gouda and Emmenthal)
- 3 small handfuls of cooked, chopped thinly sliced bacon (smoked or unsmoked)
- 1 egg
- ½ tbsp cool water
- Rocket to serve
Method
- Preheat the oven to 170 °c
- Flour your surface (lightly! Mother tipped the whole packet onto the work surface. Try not to.)
- Roll out the pastry into a large circle, being careful not to tear it
- Lightly sprinkle a little more flour on top
- Using a pizza cutter, cut the circle into six triangles (as if you were cutting a pizza into slices!)
- Add a tablespoon of Andros Chef Fig Compote onto each slice and spread evenly
- Sprinkle a small handful of the cheese over each slice
- Add about half a small handful of bacon to each slice
- Gently roll each slice, starting from the wider end, dab a tiny amount of water on the pointed end so it sticks in place and turn in the corners so it resembles a croissant shape
- Place the six croissants onto a non-stick baking sheet
- Whisk 1 egg and ½ tbsp cool water to make an egg wash then, using a brush (I prefer a silicone brush) ‘paint’ the egg wash, liberally, over the top)
- Place the croissants in the middle of the oven for 25 minutes or until golden brown
- Serve warm or cool on a bed of rocket and enjoy as a starter or even a little cocktail canape!
