CEGS COCONUT CHIA PANCAKES
It has taken me quite a while to create the perfect pancake, especially as I wanted a banana base with no flour, so here is the link to CEGS BANANA PANCAKES. Use this recipe to make the basic pancakes and then whip up this easy (I mean really easy) topping!
PANCAKE TIP: Don’t substitute the egg for a flax or chia egg. They do not work. Believe me, I really wanted to give them a go to make these pancakes vegan-friendly but the pancakes just didn’t bind! I ended up with crumbly soup that resembled something Mother would serve.

Serves 6
Topping Ingredients
- 150ml Andros Chef Coconut Frozen Sweetened Puree (in liquid state)
- 1 ½ tbsp chia seeds
Method
- Mix together and set in the fridge overnight!
- To shape; take a teaspoon of mixture and smooth it between two teaspoons to form a little oval egg
- Serve each coconut ‘egg’ over each pancake (or create your own design!)
( The mix can last in the fridge for a good seven days, so I guess it’s guilt-free pancakes all week, right?)
