CEGS CHICKEN & MANGO CURRY BALLS
Yes, it is self-isolation time. Involuntary, I might add – as this is not a conscious decision to spend 48 hours under a blanket in front of Netflix’s “are you still watching” messages. This pandemic means we can’t go out – but that doesn’t mean we can’t have a party! … Fake it ’til you make it! That’s exactly what I’ve done with these canapés; no cocktail party to attend? Host a virtual quiz night with your friends and show off these gorgeous chicken and mango curry balls to make them jealous! You could even promise to make them for the next ‘real-life’ party! Be careful when you insert the mango compote; it could squirt out rather rapidly (as seen in the recipe video, now available to watch on YouTube) .
Canapes
Ingredients
- 300gms of minced chicken or turkey
- ½ egg
- 1 tsp Garam Masala
- 1 tsp Cumin
- 1 tsp Turmeric
- 1 tsp curry powder
- 1 tsp Fenugreek seeds – ground
- 1 tsp Mustard seeds – ground
- 1 tbls Virgin Olive Oil
- ½ – 1tsp salt
- 5 tbls white breadcrumbs
- 2-3 tbsp Andros Chef mango puree
- You will need a 2mm syringe or icing syringe
(If you cannot find all of those spices, then replace then ALL with a variation of curry powder)
Method:
Pre-heat oven to 200°C
- Place minced chicken in bowl, separate with fork, add the egg mix then all of the spices and curry powder and salt, remembering to mix thoroughly after each addition of spice
- Add olive oil and mix
- Add breadcrumbs and mix
- Using a tbsp measuring spoon, measure out 1 tbsp of chicken mix per ball to keep all the same size.
- Roll into balls and place on baking tray
- Place tray into the centre of the oven for 20 minutes
- Remove from the oven and inject each ball with mango (until it starts to squirt out of the top)
- Place back into the oven for a further 5 minutes (no longer)
- Remove from the oven and, using the syringe – squirt a little extra mango on the top of each ball
Best served cold as canapes
Top Tip: If your oven does not heat evenly, turn baking tray round half way through cooking time
